Ingredients
  

  • ½ avocado
  • splash of fresh lemon juice
  • Salt and pepper to taste
  • 1 tsp olive oil
  • 1 egg
  • 1 slice cheese use dairy-free, if needed (see notes below)
  • 1 bagel

Instructions
 

  • In a small bowl, mash the avocado until smooth. Stir in the lemon juice and season with salt and pepper to taste. Set it aside.

  • Need to make it dairy-free? My favorite vegan cheese for this sandwich is Violife's Just Like Mature Cheddar Slices. However, Violife also has Provolone, American, and smoked Gouda if you want to switch things up.
  • You can prep the avocado overnight, adding extra lemon juice to prevent browning. Store it in an airtight container in the fridge.
  • For an even faster option, use prepped hard-boiled eggs. Slice or grate one onto your bagel halves instead of frying an egg.
  • If you’re short on time, you can microwave the egg instead of frying it. Spray a ramekin or small microwave-safe bowl with nonstick cooking spray. Crack the egg into the bowl and gently scramble it before covering the bowl and microwaving it for 30-45 seconds until it’s fully cooked.
  • Sprinkle a bit of Everything But the Bagel seasoning on the mashed avocado before assembling your sandwich for an extra punch of flavor. Or, add a splash of hot sauce or a little extra kick.
  • One of the best things about this sandwich is that it’s super customizable. It’s easy to add your favorite alpha-gal friendly breakfast meat (like a chicken sausage patty or a few slices of cooked turkey bacon) to this sandwich. You can also add a slice of tomato, a few thinly sliced red onion rings, and even a handful of fresh spinach leaves.
