What is Grated Egg Toast?

Grated egg toast is the breakfast upgrade you didn’t know you needed — until now. It features a slice of toast topped with creamy avocado and a hard-boiled egg grated into delicate shreds. Grating creates a light, fluffy topping instead of the usual sliced or chopped egg.

Grated egg avocado toast has become a viral sensation (thank you, TikTok). But it’s for a good reason: It’s easy to make, endlessly customizable, and surprisingly elegant. Whether you’re whipping it up for a quick breakfast or serving it as part of a weekend brunch spread, this dish is a fun and delicious way to mix up your breakfast routine.

How to Grate a Hard-Boiled Egg

Grating a hard-boiled egg might sound fancy, but it’s as simple as grabbing your favorite grater. The key is to make sure that your egg is completely cooled, which helps it hold together and makes grating a breeze.

Start by peeling the hard-boiled egg and patting it dry with a paper towel. Next, choose your grater. A microplane creates the fluffiest texture, but a box grater or a cheese grater works well, too. Hold the egg gently and grate it directly over your avocado toast or onto a plate to sprinkle on later.

Sage Advice: For the lightest, most even shreds, grate in long, steady strokes. Avoid over-grating, which can make the egg too fine and clumpy — go for light, even shreds.

Why Should I Bother Grating the Egg?

If you’ve ever topped your avocado toast with slices or chunks of hard-boiled egg, you know that they get the job done. But grating the egg takes it to a whole new level. By grating, you turn the egg into a light, fluffy texture that spreads more evenly over the avocado toast, delivering a consistent balance of flavors in every bite.

Ingredients Needed for Grated Egg Avocado Toast

You can make this grated egg avocado toast recipe with a few simple ingredients. Here’s what you’ll need to whip up this simple yet satisfying dish:

  • Bread: Start with a thick slice of artisan bread for the best results. Crusty sourdough and multi-grain bread both work beautifully, offering a sturdy base that holds up under all the toppings.
  • Ripe avocado: Choose a ripe avocado that’s soft enough to slice easily. If your avocado isn’t quite ready, you can speed up the ripening process by placing it next to some bananas for a day or two  because they’re nature’s ripening buddies.
  • Hard-boiled egg: Grated egg is the star of the show here, so make sure you have one ready to go. You can make hard-boiled eggs in advance and store them in the fridge for up to a week. I like to boil a batch on Sunday to enjoy all week long.
  • Optional toppings: This is where the fun begins. From chili flakes and Everything But the Bagel seasoning to hot honey and microgreens, you can customize your toast to suit your cravings. A squeeze of fresh lemon can brighten the flavors and complement the avocado.

How to Make Grated Egg Avocado Toast

Making grated egg avocado toast is quick, easy, and absolutely worth the minimal effort. Here’s a step-by-step guide to whip up this delicious dish:

  1. Toast the bread. Start with a thick slice of artisan bread, like sourdough or multi-grain, and toast it to your desired level of crispiness.
  2. Prepare the avocado. While the bread is toasting, peel and slice a ripe avocado. You can mash it lightly with a fork for a smoother texture or leave the slices intact if you prefer a chunkier bite.
  3. Grate the egg. Peel a hard-boiled egg and grate it using a microplane, box grater, or cheese grater. This will give you a light, fluffy texture that sets this avocado toast apart from other egg-topped recipes.
  4. Assemble the toast. Spread the avocado evenly over the toast, then top it with the grated egg.
  5. Add toppings. This recipe calls for a sprinkle of chili pepper flakes, salt, and pepper, but you can get creative. Drizzle a little hot honey for extra flavor, or add veggies like microgreens, halved cherry tomatoes, or thinly sliced cucumbers.

Equipment

Ingredients

  • 1 slice of bread
  • 1 small, ripe avocado
  • 1 tsp extra virgin olive oil
  • 1 hard-boiled egg, cooled
  • chili flakes, to taste
  • salt and black pepper, to taste

Instructions

  • Toast the slice of bread.
  • While the bread is toasting, peel and slice the avocado.
  • Place the avocado slices on the slice of toast. Drizzle with olive oil.
  • Peel the hard-boiled egg and pat dry with a clean paper towel. Grate the egg over the avocado using a microplane grater, box grater, or cheese grater.
  • Sprinkle the chili pepper flakes over the grated egg and season with salt and pepper to taste. (See other topping and seasoning ideas below.)
  • Serve immediately.

Notes

  • This is a very flexible recipe! Change things up by adding halved cherry tomatoes, a handful of microgreens, or thinly sliced cucumbers.
  • Don’t like spice? Omit the chili flakes. This recipe is still delicious with just salt and pepper.
  • Want more spice? Add a few dashes of hot sauce to the grated egg avocado toast, or drizzle a teaspoon of hot honey just before eating.
  • Experiment with spices. Everything But the Bagel seasoning is a delicious substitute for the chili flakes.
  • For best results, ensure that your egg is completely cold before you grate it.
While I prefer a microplane grater, a box or cheese grater also works.
  • You can make hard-boiled eggs ahead of time and store them in the fridge. I typically make six boiled eggs on Sunday and then have them ready to go all week.
