Instructions
In a small saucepan, bring the water and lavender to a boil.
Reduce the heat to low and stir in the sugar until fully dissolved.
Let the mixture simmer for 15 minutes.
Remove the saucepan from the heat and let it cool for at least one hour. This will allow the lavender to steep in the simple syrup mixture.
Strain the syrup using a mesh strainer to remove the lavender flowers. Discard the buds.
Pour the lavender syrup into an airtight container (I prefer mason jars) and store in the refrigerator.
